Frantoio: The Peppery Heart of Our Press

Of the four cultivars on the Boutique Olive Grove estate, Frantoio is perhaps the most characterful in the press. It’s the cultivar that makes an oil aromatic, and it’s the reason our ASCENSION and PROSPERITY oils open with such a distinct nose.

Origins

Frantoio is native to Tuscany, where it has been the dominant cultivar in Italian extra virgin production for centuries. Its name derives from the Italian word for olive mill — frantoio — which tells you something about its historical importance. It was brought to South Africa as part of the early cultivation of the olive industry and adapts well to Mediterranean-like climates, including the Karoo.

How It Grows

Frantoio trees are medium-sized and productive. The olives are oval, medium in size, and harvest green before deepening as they ripen. They carry high oil content, which makes them efficient in the press — you get more oil per kilogram of fruit than from lower-oil cultivars. This efficiency is one reason Frantoio is so widely grown for oil production.

What It Contributes to the Blend

In the oil, Frantoio brings aroma first: fresh herbs, artichoke, a hint of green banana in younger oils. Then, on the palate, a distinct peppery quality that works in concert with the Coratina’s more intense bitterness. Frantoio’s pepper is brighter and more volatile; Coratina’s is deeper and more persistent. Together, they create the finish that distinguishes a proper extra virgin from a commodity oil.

Using Frantoio-Forward Oil

The aromatic character of Frantoio makes it excellent for finishing dishes where you want fragrance as well as flavour: drizzled over bruschetta, in dressings, with grilled fish or roasted vegetables. It’s also exceptional for bread dipping, where its aroma is fully appreciated before it hits the palate.
