Olive Marinade Recipes for Game Meat

Olive oil is an excellent base for game meat marinades — it penetrates the meat, carries the flavours of herbs and spices deep into the muscle, and helps tenderise the naturally leaner, tougher fibres of wild protein. The olives themselves add a briny depth that complements game beautifully.

Base Marinade

1/2 cup Boutique Olive Grove EVOO · 1/2 cup chopped olives (Kalamata or Mission) · 3 garlic cloves, minced · fresh rosemary and thyme · juice of 1 lemon or splash of red wine vinegar · cracked black pepper · optional: smoked paprika or cumin.

Method

Combine all marinade ingredients. Place game meat in a sealable bag or shallow dish and pour over the marinade, ensuring the meat is fully coated. Refrigerate for at least 4 hours, ideally overnight. Remove from the marinade and allow to come to room temperature before cooking.

By Meat Type

Springbok or Venison: Rosemary, garlic, red wine vinegar, and whole black olives. Rich and robust.
Warthog: Cumin, smoked paprika, lemon juice, and olive oil. Bold and earthy.
Rabbit: Lighter oil, thyme, lemon zest, and a touch of raw Karoo honey. Delicate and aromatic.
Duck: Orange zest, garlic, balsamic vinegar, and olive oil. Enhances the natural sweetness.
