On the Boutique Olive Grove estate in Xamdeboo, Aberdeen, four olive cultivars grow side by side in the clean Karoo air. Each one brings its own character to our extra virgin olive oil — and to your table.
Mission Olives — Balanced & Fruity
Mission olives have a rich heritage. Medium to large, ripening to a deep purple, they offer a balanced flavour with mild fruitiness and gentle bitterness. Versatile in both oil and table olive production.
Recipe: Mission Olive Tapenade
1 cup pitted Mission olives · 2 tbsp capers · 2 garlic cloves · 2 tbsp lemon juice · 2 tbsp Boutique Olive Grove EVOO · salt and pepper. Blend until smooth. Serve with crusty bread.
Frantoio Olives — Peppery & Aromatic
Originating from Tuscany, Frantoio is the workhorse of our press. It brings a distinct aroma and robust flavour — artichoke, fresh herbs, and a lingering peppery finish. High oil content makes it ideal for premium extra virgin production.
Recipe: Frantoio Bruschetta
Toast sliced baguette. Top with diced ripe tomatoes, a few Frantoio olives, fresh basil and a generous drizzle of EVOO. Season and serve.
Coratina Olives — Bold & Intense
Native to Southern Italy, Coratina is the backbone of our blend. Small to medium, elongated, deep purple — and unmistakably pungent. High in polyphenols, bold in flavour. Not for the timid palate, but exactly right for people who want their olive oil to mean something.
Recipe: Coratina Pasta
Sauté garlic in EVOO. Add halved cherry tomatoes and halved Coratina olives. Toss with cooked spaghetti, red pepper flakes, parsley and Parmesan.
Leccino Olives — Mild & Buttery
Leccino is the gentle one — small to medium, oval, with a delicate buttery taste and a hint of sweetness. It softens and rounds our blend beautifully, and works equally well as a table olive.
Recipe: Leccino & Feta Salad
Combine mixed greens, pitted Leccino olives, cherry tomatoes, cucumber, red onion and crumbled feta. Dress with EVOO and lemon juice. Season and serve.

Together, these four cultivars create the ASCENSION and PROSPERITY oils — each harvest a slightly different expression of the same Karoo ground. That’s rather the point of a boutique estate: nothing is standardised, and everything tastes of somewhere specific.
