A refreshing combination of olives and citrus that works as a starter, side, or light meal. The briny depth of the olives against the brightness of fresh citrus is a genuinely satisfying contrast.
Choosing Your Olives
For this salad, variety matters. Green olives bring sweetness and crunch; black olives add a more robust, savory note. A mix of both gives you the full range. Our Mission olives — available from the estate — work particularly well.
The Citrus
Use a mix of oranges, grapefruits, and mandarins for colour and flavour complexity. Fresh is non-negotiable. Add some zest from one fruit for extra fragrance.
The Dressing
Whisk together: 3 tbsp Boutique Olive Grove EVOO · 1 tbsp fresh lemon juice · 1 tsp honey · pinch of salt and pepper. Optionally add a touch of Dijon mustard or minced garlic.
Assembly
Combine mixed greens, sliced citrus, halved olives, and thinly sliced red onion. Add toasted almonds or walnuts for crunch. Fresh basil or mint lifts the whole dish. Dress just before serving.
Pairings
Serve alongside grilled chicken or fish for a complete meal. The bright citrus flavours complement white fish particularly well.
